You know how they say an apple a day keeps the doctor away, or eat 5 servings of vegetables a day. Well, those people were actually right! So every time I prep my meals, I always make a big batch of this salad to quickly grab and add to my meals. So what better way to start my first salad recipe.
Ingredients: 2 servings
2 cups of kale
1 tbsp of pumpkin seeds
8-10 cherry tomatoes
1/4 large cucumber
1-2 tbsp of raisins
This is my favourite combination but the great thing about this is that you can switch out the leafy greens from kale to spinach or swiss chard. The great thing about leafy greens is that they can hold up better and longer than say romaine or iceberg lettuce, which tend to brown,eww. Pumpkin seeds orpine nuts, same difference. Some may prefer dried cranberries than raisins. Whatever floats your boat and is available in your pantry at the time. I love to bulk buy my pumpkin seeds and raisins from my local bulk store, so that means many weeks of this to-die-for salad.
Chop up all the veggies into bite size pieces. We all know that raw kale is a pain to eat, chew and taste without a little (actually a lot) of help. So I love to pop it into the microwave for about 1 minute with a little bit of salt. Your teeth and taste buds will thank you.
With the kale done, you can put the rest of the topping on the salad and call it a day.
And it’s so yummy that I also combine two servings and call it a meal. I love to pair it with a very simple salad dressing because I am not a fan of all that processed, already made salad dressings with ingredients that seem like a different language.
Juice of one lemon
2 tbsp of olive oil
Salt and Pepper to taste
Combine the two ingredients in any container. It’s so fun to make this dressing when you get to see the layers of lemon juice and olive oil. Or maybe that’s just the inner science geek in me talking.Then shake well to combine the two layers.
I got these little plastic cups at Dollarama for about a dollar and I just stash it in the fridge to grab and go.
