3-ingredient pancake

So I am just going to make this short and sweet because it is such a simple recipe but absolutely amazing. It is great to wow your friends and family for brunch or breakfast or any other meal time, or you can even make it as a snack or a savoury addition to a hearty stew or chilli.

Ingredients

  • 1 ripe banana
  • 1.5 cup of rolled oats
  • 1.5 cup of almond milk (or any non diary milk)

Directions

  1. In a blender, first blend just the oat to get a flour, then add the banana and almond milk and  blend until you get a thick batter.
  2. After, use a non-stick pan, or a griddle if you have one, to fry your pancakes . Heat the pan and wait till it is hot, not smoking, then pour the batter in the pan into circles, however big you want each pancake. Let the pancake cook and wait till you see bubbles/ small holes on the top of the pancake; this is an indicator that the pancake is ready to be flipped. Flip the pancake and let it cook on the other side for a few minutes, then it is ready to be enjoyed.

As always, you can add many things to the batter like chocolate chips (vegan of course), blueberries, nuts or dried fruit and the toppings are endless.
