Here is a savoury snack bite to go well with the Peanut Butter and Date Snack Bites. For this recipe I used leftover beans from my Tomato Rice recipes and made snack bites that could be easy to take on the go.
Ingredients
- 1.5 cup beans
- 1/4 cup corn
- 1/2 cup rice-left over turmeric rice (you could use white rice here but add 1/4 tsp of turmeric to this recipe)
- 1/4 tsp ginger powder
- 1/2 tsp cumin powder
- 1/4 tsp oregano
- a dash of salt
- 2 tbsp of rolled oats
Directions
- Preheat the oven at 400°F
- In a bowl add the beans and mash well with a potato masher
- After add the rice and corn and mash well with the beans, till the mixture is well combined
- Then, add the spices and the rolled oats and mix the spices well into the mixture
- Line a baking tray with parchment paper and scope out 1 tbsp portions of the mixture onto the parchment paper
- After place the mixture in the oven for 20 mins
- After 20 mins turn the bites over to let the bottoms cook
- Place back in the oven for another 10 mins
- These snack bites should be done
- Serve these with any sauce of choice, my personal favourite is with Tomato Stew
