So fall is fast approaching, which means lots of fresh apples! Because of my love for apples, this week I will be including two different apple flavoured oats, which are absolutely divine.
For these oats, I made them oven topped but like all my other oats recipes, it can be baked or put in jars overnight.
Ingredients–1 serving
- 1/2 apple, chopped (any sweet apple–red delicious or gala preferably)
- 1 cup of oats
- 2.25 cups of water
- 1 tsp chia seeds
- 2 dates
- a few whole cloves
- 1 tsp all-spice
- 1 tbsp coconut sugar
- a handful of almonds-crushed
- 2 tsp cinnamon
Directions
If you have been reading my previous posts, you know the drill.
- For stove top
- In a saucepan add the apples, the spices and half of the coconut sugar in one cup of water. Put the heat up to medium-high and let the apples soften.
- Add the rest of the water and the oats and bring the porridge to a medium heat. As usual you can only add 2 cups of water and add the rest of the fluid as a non-diary milk.
- Add the chia seeds and stir it into the mixture.
- As usual, continue to stir the porridges to avoid it from sticking to the bottom and creating a creamy consistency.
- After 10 minutes you will have a warm bowl of oatmeal.
- Serve the oatmeal with a few chunks of fresh apples, almonds and the rest of the coconut sugar. The apples are already pretty sweet so you will not need more sweetener.
- Overnight Oats
- At the bottom of the jar add the chopped apples, the coconut sugar and the spices and mix well to make sure the apples are covered in the spices
- Then combine 1 cup of oats with 2.25 cups of water in the jar
- Add the chia seeds, mix the mixture, then cover the jar and leave it overnight
- Take out of the fridge the next day and pop it in the microwave for a creamy porridge on the go. I will really advice warming up the porridge because it’s really warming especially on a cold fall morning.
- For Baked oats
- Preheat the oven to 375 degrees.
- Combine the ingredients into a bowl and bake the oats for around 20 minutes till the oats crisp up at the top.
- Take the oats out and let it rest and cool.
- you can always put this into cupcake tins for breakfast on the go.
