As you know, I am not the best baker but I have been doing such a good job improving that I am really hoping to get better. I have been starting with the same base for my baked goods because it seems to be working well and giving the best result, moist, sweet, fragrant baked goods. I am hoping to make such an adjustment for a banana bread recipe I found that I would like to tweek. I have been so fortunate to get my cacao from Ghana which is far richer than the ones I find here. Being one of the world’s largest export of cacao beans, of course the best quality comes from Ghana. Knowing that getting a hands on this type of powder is difficult, I suggest looking into Ghanaian stores in your city which I guarantee you will find one. But if not, the regular one is fine. Anyway here are some great muffins that will keep your house warm and smelling fragrant.
Chocolate Coconut Muffins
Ingredients
- 2 tbsp of cacao powder
- 1 and 1/2 cups organic all purpose flour
- 1 and 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 tsp of allspice (nutmeg, cloves and cinnamon
- a pinch of salt
- 1/4 cup brown sugar
- 2 tbsp of coconut oil, melted
- 3/4 cup almond milk (or any plant milk)
- 1 flax egg (1 tbsp ground flax seeds, 3 tbsp water)
- For the sauce: 2 tbsp of cacao powder, 1/4 maple syrup, 1 tbsp peanut butter powder, 1 tbsp of water to loosen the syrup
Instructions
First prepare you flax egg. In a bowl for your wet ingredients, combine 1 tbsp of ground flax seeds to 3 tbsp of water and let it sit
In a large mixing bowl combine all the dry ingredients: the flour, baking soda, baking powder, sugar, spices, cacao and salt
Combine the wet and dry ingredients and mix well.
Line the bottom of a loaf pan with parchment paper and grease the edges with some coconut milk
Bake in the oven at 350 for 20-30 min. To check if ready poke a toothpick through the bread and pull out making sure there is no batter on the stick.
For the chocolate sauce mix the maple syrup, peanut butter and cacao powder and add a little bit of water if mixture is too thick.
Drizzle the syrup on top and enjoy.
