You can’t imagine my excitement this morning when I knew I would enjoy this very delicious bowl of oatmeal. I have been craving something sweet and wanted to indulge without feeling sluggish from the eventual sugar crash hours after a helping of pie.
I have had many, many overnight oats but this was certainly my favourite. I love to make these the night before so that I can just grab it and go the next morning. Today I put blueberries but who knows what I shall try next
Ingredients
- 1/2 cup of rolled oats
- 1 tsp chia seeds
- 1 tbsp flax seeds
- 1/4 cup almond milk
- 1 cup of water–till all the oats are buried under the water
- 1 tbsp maple syrup
- 2 tbsp of cacao powder
Optional
- 1 tsp cacao nibs
- Raisins
- 1 tbsp pecans
- 1 tsp unsweetened shredded coconut.
Directions
Being the lazy person that I am, i basically combing all the dry ingredients and then add the water and stick it in the fridge, then pop it in the microwave for a minute for a more porridge like consistency. I put whatever frozen berries I had lying around, which happened to be blueberries, next time I might try strawberries. You can definitely toss in any other topping you want.
Boy was it so good, i just couldn’t even.
Cruising through youtube I found a couple of videos on overnight oats but my favourite is by far by Canada’s own Sara Lynn Cauchon aka domesticgeek, minus the greek yoghurt to keep it vegan. So definitely check that out.
Overnight oats and porridges have become a staple in my diets because they are so so simple and cheap. And my favourite part is how versatile it is. Basically a blank canvas waiting for an artist to make a picture. I am probably going to be dreaming about this tonight.
