In this blog post, you will find a really easy Ghanaian butter bread recipe that is vegan and delicious. I thought it was about time I added this recipe to the repertoire, especially as my sugar bread recipe was incredibly popular.
What You will Need for This Recipe
- Yeast
- Flour: I used a mix of all-purpose and bread flour because I wanted the bread to be light but also have structure
- Sugar: to activate the yeast and add a slight sweetner
- Butter: This makes the bread very rich. I used unsalted plant based butter but I actually recommend using a salted butter because you want to taste the salt in this bread. Traditionally bread in Ghana is made with margarine, making it an easy ingredient to use in vegan baking.
- Flavouring: For a nice aroma I added some nutmeg and vanilla essence
- Plant Based Milk: I used a combo of soy milk and almond milk. You can use one or the other but I highly recommend soy milk because of its higher fat and protein content. It is a good substitute for dairy milk.
How to make butter bread
Vegan Ghanaian Butter Bread
Ingredients
- 1/2 tbsp dry instant yeast
- 2 tbsp sugar
- 1 1/4 cup soy milk
- 2.5 cup all-purpose flour (360g)
- 1 cup bread flour (140g)
- 2/3 cup vegan butter**
- 1 tsp of salt
- 1/2 tsp nutmeg
- 1 tsp of vanilla essence
Instructions
Heat up the soy milk till it is lukewarm (about 25seconds in the microwave)
Add 1 tbsp of white sugar and 1 tbsp of dry yeast into the soy milk
Leave it for 10 minutes till it blooms
While the yeast is blooming, mix all the dry ingredients (flour, nutmeg and salt) and melt the vegan butter. You can also warm the almond milk
Once the yeast has bloomed (frothy), make a well in the middle of the flour mixture then add the yeast, butter and vanilla essence and start to mix
Slowly, add in the almond milk. You may or may not use all of it so you want to add it slowly till everything is well combined.
Knead for 10 minutes by hand or you can use a stand mixture till the dough is soft and smooth.
Let it rise in an oiled bowl for about 45 minutes or till when it has doubled in size.
Once it has risen, we are going to shape it into a log, so spread out the dough into a rectangle then start to roll it into a log, tucking in the edge
Place the log in an oiled loaf pan and let the dough rise again for another 30 minutes.
While the loaf is rising, preheat the oven to 325°F.
After the 30 minutes has elapsed place the loaf in the oven and let it bake at this temperature for 25 minutes, then turn the heat down to 300°F and let the loaf bake for another 10 minutes.
Once the time has elapsed, you can take the loaf out and let it cool down completely
Slice and enjoy with some butter and hot chocolate.
Notes
** I used unsalted to control my salt content but I will actually recommend using salted vegan butter and skipping the additional salt
