Red Lentil Stew

This is by far one of the quickest and easiest recipes I make. I have been making this curry for the past two years since being vegan and it has become such a usual that I can make it with my eyes closed. It takes no time to make and ready in less than 40 minutes.

Red Lentil Stew

Prep Time: 10 minutes Cooking Time: 30 minutes Total Time: 40 minutes

Ingredients

  • 2 cups of red lentils (these cook quickly)
  • 4.75 cups of water
  • 1 large can of diced tomatoes--796mL diced tomatoes
  • 1 can of tomato paste - 156mL can ~ 5tbsp
  • 1 tbsp each of curry powder
  • 1 tbsp of garam masala
  • 1 tbsp of cumin powder
  • 1 tbsp of cardamon powder
  • 1 tbsp coriander seeds (I buy my spices in bulk so they are cheaper)
  • 1 medium sweet potato diced

Instructions

In an instant pot, add all the ingredients and mix well

Seal the instant pot and set it to manual--30 minutes

When the timer is done, release the steam and it is ready

Notes

If you do not have an instant pot, you can cook it in one pot on a stove at medium heat or in a rice cooker till the lentils are well cooked Serve with vegetables or any carb of choice--rice, more potatoes or my favourite: plantains
