The Creamiest Cashew Dressing

This super quick recipe has been a long time coming. For my salads, I have been craving creamy dressings more and more and the first thing that came to mind is using cashew as a base. First of all, cashew has an inherently sweet taste but one can also achieve a really nice sweet and creamy dressing that can really hold a lot of flavour with cashews. This dressing is super easy, I feel like I say this a lot, but it is true and works very well as a salad dressing, even a creamy dipping sauce for fries or veggies or even on top of pizza. I know the pizza combo is weird but I had a creamy cashew cream on a simple margarita pizza at Planta (best vegan restaurant ever) and it was incredible. The next three recipes on my blog will utilize this dressing in different and tasty ways.

Creamy Cashew Dressing

Prep Time: 2+ hours Cooking Time: 10 minutes

Ingredients

  • 1/2 cup cashews
  • 2/3 cup cold water
  • 1 tbsp nutritional yeast
  • 1.5 tsp lemon juice
  • salt and pepper to taste
  • 1 tbsp of fresh parsley chopped (optional)

Instructions

Soak the cashews in water for at least 2 hours

Combine all the ingredients in a high speed blender and blend till very smooth
