Energy bites are by far a go to snack for that in between meal pick me up! They are absolutely tasty, easy to make and can last a long time. Also as a university student, I do not have access to a food processor and wanted to make a simple recipe that did not require as much appliances. This simple peanut butter and date snack bites have few ingredients and are super easy to carry.
Peanut Butter & Dates Snack Bites
Ingredients
- 1/2 cup of dates (not medjool but the hard cheap ones you can find in any grocery store)
- 1 flax egg-1 tbsp grown flax seed with 2.5 tbsp of water
- 1/4 cup hot water
- 1/4 cup thick peanut butter
- 1/2 tsp cinnamon
- 1/4 tsp cloves
- 1 3/4 cup of rolled oats
- Optional: 2 tbsp cacao powder
Instructions
Make a flax egg: mix 1 tbsp of ground flax seed with 2.5 tbsp of water in a mixing bowl and leave for 5-10min till it becomes gel-like
Soak the dates in the hot water till the dates are soft. Or you can also microwave the dates in 1/4 cup of room temperature water for 30 seconds instead for quicker results
In the mixing bowl add the soften dates, peanut butter and spices and mix well till you get a paste
Then you will add the rolled oats slowly (1/2 cup at a time) till everything is well mixed and you get a sticky paste
Portion everything with a tbsp per each serving and mold into a ball
You can dust a few of the date balls with cacao powder
Store in the fridge for up to a week or you can freeze it for up to 2 months
